I make a curry at least once a week. In the winter, I tend to favour richer, spicier curries like jalfrezis and bhunas but in the summer, I turn to lighter, fresher curries like dhals and keemas.

Recently, I discovered the grain mince from Waitrose and used it to make this keema and it was absolutely perfect. However, I have also made the recipe since using regular soya mince which has also been very tasty.

This recipe easily multiplies, making a great lunch for the next day or a great batch cook for the freezer. Perhaps best of all, it takes less than 30mins from start to finish so is a brilliant meal to have on stand-by for those evenings when you’re running late and the prospect of dinner being just a sandwich is becoming increasingly likely.

Serves 2

Ingredients:

0.5tbsp oil

1 onion, diced

2 cloves garlic, crushed

2 green chillis, chopped (seeds removed if you want less heat)

1tsp ground turmeric

1tsp curry powder (mild or medium, up to you)

2tsp coriander seeds

ground pepper

salt flakes

1 x pack of Waitrose grain mince* (or around 240g of soya mince)

Juice of half a lemon

500ml vegetable stock

140g frozen peas

2 large handfuls of spinach

Fresh coriander, vegan yoghurt and warm naan breads to serve

Method:

Heat 0.5tbsp oil in a deep frying pan and add the onion. Fry gently until translucent and then add the garlic, chilli, turmeric, curry powder, coriander seeds and seasoning, After a couple of minutes, add the grain mince (or soya mince) and lemon juice and stir well. Let the mince sizzle away for 3-4mins before pouring in the stock. Bring to a simmer and keep there, letting the mince absorb the stock. Give it an occasional stir and, after about 15mins, it will be ready. Once ready, add the peas, wait a couple of mins and then add the spinach. Allow the spinach to wilt and then serve the keema in bowls with warm naan breads, a dollop of yoghurt and a sprinkle of coriander.
